Meal Plan -- Week 27

How is/was your 4th of July! I hope full of so much fun and yummy recipes. Here's my family's meal plan for this week. Can't believe we're already halfway through the year. WHAT?  

BREAKFAST:

Smoothies always. This week we're making PMS SmoothiesBlueberry Chia SmoothiesCarrot Orange Ginger Smoothies and Everything But Banana Smoothies. Then Breakfast Rice Cakes for weekend brunch. 

SNACKS:

Wanted to have filling, healthy snacks this week. We're planning on Good Morning Protein CookiesWatermelon PizzaBanana Cottage Cheese Honey Spread on toast, and Spinach Cake Muffins.

LUNCH:

Making some family favorites for lunch this week like Acai Bowls, Chocolate Chia Seed PuddingRefrigerator Oatmeal, and Baby Frittatas.

DINNER:

Sunday: Happy 4th of July! We're making some favorite Festive 4th of July Recipes for a backyard hang with some friends. 

Monday: Mexican inspired breakfast for dinner for meatless Monday! Breakfast Quesadilla with Pressure Cooker Black Beans and homemade Guacamole.

Tuesday: Broiled Salmon with Summer Fruit Salad and Brown Rice Cakes. This is a super simple recipe that's one of our go-to's. 

Wednesday: We're stoked that One Potato now offers vegan meal options! This week we're going to make the Vegan Gado Gado Bowls and are super stoked. 

Thursday: Herb Roasted Chicken with Brussel Sprouts and Polenta Fries from One Potato.

Friday: Eggplant Parmesan with a warm escarole, bean, and bell pepper salad from One Potato.

Saturday: Order in from local restaurant!
