We’re sneaking into July this week, and I ,for one, can’t believe we’re already halfway through the year! Hope your summer as been relaxing and full of some delicious recipes. Here’s my family’s meal plan for this week, including a preview of some Fourth of July recipes for next weekend!
BREAKFAST:
Smoothies always. This week we’re making PMS Smoothies, Blueberry Chia Smoothies, Carrot Orange Ginger Smoothies and Everything But Banana Smoothies. Then Breakfast Rice Cakes for weekend brunch.

SNACKS:
Wanted to have filling, healthy snacks this week. We’re planning on Good Morning Protein Cookies, Banana Cottage Cheese Honey Spread on toast, Super Healthy Granola and Spinach Cake Muffins.

LUNCH:
Making some family favorites for lunch this week like Acai Bowls, Chocolate Chia Seed Pudding, Baby Frittatas and this Crispy Rice Salmon Salad I can’t stop making.

DINNER:
Sunday: Broiled Salmon with Summer Fruit Salad and Brown Rice Cakes. This is a super simple recipe that’s one of our go-to’s.

Monday: Mexican inspired breakfast for dinner for meatless Monday! Breakfast Quesadillas with Pressure Cooker Black Beans and homemade Guacamole and sour cream.

Tuesday: Sweet Gingery Tofu with Sauteed Baby Bok Choy served over brown rice! This is the best tofu recipe ever.

Wednesday: Air Fryer Roast Chicken with Grilled Lemon Asparagus and Polenta Fries! Super simple and delicious.

Thursday: Homemade Doner Kebab for an easy one pan weeknight option. My kids love this recipe!

Friday: Green Machine Pizza with a simple Summer Garden Salad. We’ll make some Peach & Strawberry Shortcakes for a sweet treat too!
