Happy (almost) 4th of July! I hope it’s full of so much fun and yummy recipes. Here’s my family’s meal plan for this week. Can’t believe we’re already halfway through the year. WHAT?
BREAKFAST:
Smoothies always. This week we’re making PMS Smoothies, Blueberry Chia Smoothies, Carrot Orange Ginger Smoothies and Everything But Banana Smoothies. Then Breakfast Rice Cakes for weekend brunch.
SNACKS:
Wanted to have filling, healthy snacks this week. We’re planning on Good Morning Protein Cookies, Watermelon Pizza, Banana Cottage Cheese Honey Spread on toast, and Spinach Cake Muffins.
LUNCH:
Making some family favorites for lunch this week like Acai Bowls, Chocolate Chia Seed Pudding, Baby Frittatas and adorable American Flag Toast
DINNER:
Sunday: Broiled Salmon with Summer Fruit Salad and Brown Rice Cakes. This is a super simple recipe that’s one of our go-to’s.
Monday: Mexican inspired breakfast for dinner for meatless Monday! Breakfast Quesadilla with Pressure Cooker Black Beans and homemade Guacamole.
Tuesday: Sweet Gingery Tofu with Sauteed Baby Bok Choy served over rice! We can’t get enough of this tofu recipe.
Wednesday: Air Fryer Roast Chicken with Grilled Lemon Asparagus and Polenta Fries! Super simple and delicious.
Thursday: Happy 4th of July! We’re making some favorite Festive 4th of July Recipes for a backyard hang with some friends.
Friday: Green Machine Pizza with a simple Summer Garden Salad. We’ll make some Peach & Strawberry Shortcakes for a sweet weekend treat too!
Saturday: Order in from local restaurant!
