Fall is (almost… well, not really it was still 90 degrees last week) in full force! BUT, I’m seeing more fall produce at the farmers market every week, and I’m so excited. What recipes are you looking forward to making this week?
BREAKFAST:
Another week filled with good-for-you smoothies. Up this week we’ve gotย Immune Boosting Very Berry Smoothie,ย Carrot Orange Ginger Smoothieย andย Vanilla Kale Spirulina Smoothie.ย For brunch over the weekend we’re making Banana Waffles.ย

SNACKS:
For snacks this week, we’re makingย Super Healthy Granolaย to munch on by itself or on top of some greek yogurt with berries. We’ve also got Protein Cereal Bars,ย Apple Applesauce Muffinsย andย Cinnamon Toast Pinwheels.

LUNCH:
School is in full swing! This week for lunch we’ve got Apple Cheese Wraps, Egg Pesto Melt, Berry Delicious Oatmeal, and Cheesy Pizza Hot Dogs.

DINNER:
Sunday: I’m still obsessed with this Salmon with Fennel, Citrus and Olives recipe. Making that with a side of Yukon Gold Mashed Potatoes and our go-to Air Fryer Veggies.

Monday:ย Vegetarian Skillet Lasagnaย is on the menu for meatless Monday. I love an easy one pan recipe! We’re also going to have a Italian Chopped Salad on the side with this one.ย

Tuesday: If I can make a meal on one pan, I’m going to do it. This Middle Eastern Sheet Pan Chicken Dinner is super easy to make and the clean up is even easier!

Wednesday: Moo Shu Chicken with Perfect Brown Rice. This is one of our favorite meals. Easy peasy and delicious!

Thursday: Lemon Shrimp Pasta with Bacon Wrapped Air Fried Asparagus on the side. This pasta is super simple but also super yummy!

Friday: Pizza Muffins with Caesar Salad for a fun Friday night meal! Who doesn’t love pizza?

Saturday: Order in from local restaurant!

Nice roundup โ I love the seasonal focus. Quick question: do you batch any of these breakfasts or snacks ahead for busy mornings? Also, curious if youโve tried making the salmon dish with a different potato side for something lighter.
Yes! As much as I can do ahead of time, I try to. Things like muffins, bars, etc I usually make at the start of the week to have on hand for snacks and breakfasts. Smoothies are so quick for me now, but you could batch those too if you wanted. Make “smoothie jars” with all of the ingredients (except for the liquid), and store them in the freezer. When you’re ready to make your smoothie, dump everything into the blender with your milk of choice and whiz it up! For the potato side, you could go for a roasted sweet potato or Sweet Potato Fries or even these Air Fryer Baby Potatoes. Hope this helps!
