October is (nearly) here! I love this time of year. There’s so much beautiful fall produce at the farmers market it makes my eyes light up! Here’s this week’s meal plan for our family. Let me know what you think!
BREAKFAST:
Smoothies for breakfast, of course! This week we’ve got Green Breakfast Smoothie, Tropical Smoothie, Bright Green Smoothie and Chocolate Almond Butter Smoothie. Then for weekend brunch we’re making these delicious Whole Wheat Cinnamon Banana Pancakes!
SNACKS:
Snacks this week are going to be Apple Applesauce Muffins, Good Morning Protein Cookies, Super Healthy Granola and Apple Cheese Wraps. Simple, filling and delicious.
LUNCH:
For lunch this week we’re making Apple Pie Panini, Coconut Cream Baked Oatmeal, Uncrustables and PBJ Pancakes Sandwiches.
DINNER:
Sunday: Roast Chicken with Caramelized Lemons, Cherry Tomatoes and Olives with Mascarpone Mashed Potatoes and Air Fryer Okra for Sunday supper.
Monday: Spiced Carrot Cauliflower Soup with Spinach Cheddar Chive Scones for a warm meatless Monday.
Tuesday: These easy peasy Cold Soba Noodles are my absolute favorite! They’re ready in no time and so tasty!
Wednesday: Spaghetti Pie with a Caesar salad on the side. Take spaghetti to the next level with this simple and fun recipe!
Thursday: Salmon Burgers with Sweet Potato Fries and Roasted Brussels Sprouts.
Friday: Pizza Balls with a Farmers Market Salad for a fun and delicious pizza Friday meal!
Saturday: Order in from local restaurant!
