Meal Plan -- Week 7

Last week was full of hearts and treats for Valentine's Day and now we're getting back on track! Keep scrolling for this week's meal plan for my family.

More smoothies per usual! This week we're making Vanilla Avocado Greens SmoothiesBlueberry Chia Smoothies, and Pregnancy Smoothie. We also will use any extra bananas to make Banana Split Breakfast this weekend and these protein-packed Cottage Cheese Pancakes!

Snacks are what keeps us going throughout the day, so we're making No Bake Cookie Dough Balls and I have these Healthy Snacks on hand! Plus we're making Chocolate Banana Bites and a Chocolate Zucchini Bread loaf for the week.

Vegetarian Sandwiches and Whole Wheat Pizza Bagels for lunch are always welcomed. Plus we're making Banana Dog Bites and Turkey Club Lettuce Wraps.

Sunday: Spaghetti and Meatball Muffins are super cute and fun to eat! We're pairing these with some Air Fryer Veggies to round out the meal.

Monday: It's meatless Monday so we're making Pasta with Hemp Seed Pesto (a great option for those of you with nut allergies!). We've also got Grilled Lemon Asparagus and then Chocolate Banana Nice Cream for dessert!

Tuesday: These Skirt Steak Fajitas are the bomb! We're pairing these fajitas with Pressure Cooker Pinto Beans and Guacamole. A perfect combo.

Wednesday: Chicken Paillard with Crispy Potatoes and Arugula Salad from One Potato Box! I've linked my weelicious Chicken Paillard and Crispy Smashed Potatoes recipes if you don't get One Potato and want to make this meal it too!

Thursday: Sweet and Sour Pineapple Chicken with Un-fried Rice from One Potato Box. This recipe is so delicious. I linked my weelicious versions of this recipe so you can make it too!

Friday: Turkey Burger and Fries for a Friday burger night from One Potato. We can't get enough of this turkey burger with all the toppings!

Saturday: Supporting a local restaurant!

What are you making this week?

Hi, I’m Catherine. Mama of three. A Kentucky girl living in California. Here’s what I know: all kids can be great eaters and mealtime must be easy. I create simple, healthy recipes the whole family will love.
