Happy first week of fall! This time of year is so exciting. I always love when new produce starts showing up for whatever season is arriving so there are lots of fall inspired recipes in this week’s meal plan! What are you looking forward to making most? 

BREAKFAST:

Of course, starting our days off with smoothies per usual. This week we’re making Blueberry Chia SmoothieCrazy Healthy SmoothieChocolate Peanut Butter Smoothie, and Super Green Tropical Smoothie. Then we’ve got Pumpkin Waffles ready to go for the weekend!

SNACKS:

So pumped to make these Flourless Pumpkin Chocolate Muffins again! We’ve also got Frozen Bananas on a StickCarrot Snack Sticks and Green Treats on the plan.

LUNCH:

For lunch we’ve got Turkey Pickle Roll Ups (you can use ham too!), Mexican Egg & Cheese QuesadillaCucumber Stackers, and Grilled Pizza Roll Ups

DINNER:

Sunday: Perfect Roast Chicken (I’m going to make two and have leftovers for pasta later in the week!) paired with Air Fryer Baby Potatoes and Cast Iron Brussels Sprouts with Pomegranate and Garlic.

Monday: Vegetarian Chimichangas topped with Guacamole, Salsa and Sour Cream. These are so yummy. I can’t wait to make them!

Tuesday: White Bean, Shiitake and Vegetable Bowl. We LOVE this meal and it’s super healthy.

Wednesday: Chicken Mozzarella Pasta with a big farmers market salad. This recipe is one of the easiest ones you’ll ever make!

Thursday: Turkey Burgers with all the toppings and Fries for a quick and easy Thursday night meal.

Friday: Pizza Quesadillas for pizza Friday! Plus we’ll have a big salad from the farmers market produce this week and Apple Pie Turnovers for dessert!
