Meal Plan -- Week 6

It's August which means we're all getting back to some sort of routine, whether it be school (in person or at a distance) or work. Whatever the new normal is for you, I hope these weekly meal plans are helpful! 


We're making several smoothies from the Smoothie Project cookbook this week, like the On Vacation Smoothie (pictured below and on page 53), Crazy Healthy smoothie (page 141), and Pink Milk (page 126). We've also got PMS Smoothie and Waffle French Toast on deck for breakfast. 


Making snack time fun with Frozen Bananas on a Stick and Homemade Fig Bars. Then a little savory snack moment with some Air Fryer Crispy Chickpeas. When we snack I want us to be full, so also making these incredible Protein Cereal Bars.


We always get tons of avocados from the farmers market each week so we're going to use them to make Baked Avocado EggsBLT BitesUncrustables and Tomato Bread Salad are also on the list because they're super simple to make. 


Sunday: Chicken in Lettuce CupsPerfect Brown Rice and Cucumber Salad is one of our favorite meals and super healthy!

Monday: Caprese Quesadillas make with fresh tomatoes that are oh so good! We're pairing the quesadillas with Avocado Soup

Tuesday: Beef + Vegetarian Pierogis with Farmers Market Salad from One Potato. Then we're making Peach and Strawberry Shortcakes for dessert. Yum!

Wednesday: DIY Salmon Superfood Salad Bowl with Acai Vinaigrette from One Potato. This is one of our favorite meals! 

Thursday: Turkey Tacos with Guacamole, Pico de Gallo and Slaw from One Potato. They save me every week!

Friday: It's pizza Friday is our house so we're making Pizza Muffins with all of the toppings! Then some Summer Fruit Gazpacho for dessert. 

Saturday: Support a local restaurant.
